What you need
MARINATED STRAWBERRIES:
10 fresh strawberries
1 vanilla pod
50 g honey
PORRIDGE:
2 dl water
1½ dl Fynbo Organic and Fairtrade elderflower Fruit Juice
130 g oatmeal
Pinch of salt
A handful of almonds
4 tablespoons skyr
Classic oatmeal porridge with a twist of elderflower and summer. Served with raw marinated fresh strawberries. Perfect for warm summer mornings.
METHOD
Marinated strawberries
Melt the honey at low heat. Cut the strawberries into quarters and put them in a glass that has been scalded in boiling water. Scrape out the vanilla seeds. Pour the melted honey over the strawberries and add the vanilla seeds. Mix with a spoon until the vanilla seeds are evenly distributed. Let it infuse for at least one hour. It can be a good idea to do this the evening before.
Porridge
Bring water, elderflower, oatmeal and salt to the boil. Let it simmer and keep stirring until the porridge thickens. Fold skyr and coarsely chopped almonds into the porridge.
Serve the porridge topped with marinated strawberries and edible flowers (e.g. elderflower).
